This is a very popular dish with the Phillipine people, soft on the inside and very crispy on the outside.
For a lot of crispiness, add a lot of bread crumbs before frying and for inner softness, throw in a lot of cheese and mash, together with other ingredients, thoroughly.
Ingredients :
— 1-2 tablespoons of garlic powder
— 3-4 pieces of potatoes
— 1-2 eggs
— 3 tablespoons of all-purpose flour
— 1 teaspoon of paprika or powdered pepper
— 1 teaspoon of salt
— 1-3 cups of grated cheese
— 1 cup of bread crumbs
— olive oil or any kind of cooking oil
— 3 cloves of garlic
Recipe :
1. Peel, cut potatoes into small chunks and boil them with a pinch of salt.
2. Wash and steam chicken drums with garlic powder, grinded cloves of garlic, paprika and any other spice of your choice.
3. Mash potatoes in a wide bowl when cooked.
4. Scrape chicken off drums when tender on a chopping board.
5. Dice chicken into smaller bits and add to the bowl of mashed potatoes.
6. Add pepper corn, all purpose flour, salt, paprika and grated cheese into the bowl of mashed potatoes.
7. Mix together till all ingredients are evenly stuck together.
8. Break eggs into a bowl and whisk till smooth.
9. Pick up chicken bones and re-shape the mixture around it like you would have the original chicken drum.
10. Dip each shape in flour first, egg mixture second , and, finally, in bread crumbs before frying in hot oil.
11. When crispy enough, dish out unto a spacious bowl with holes underneath like a colander, for remnant drops of oil to seep through.
12. Serve with any sauce of your choice.
